Rajun Cajun Speckled Trout
Ingredients:
1 lb. speckled trout fillets |
2 Tbsp Cajun Rub |
1 egg, beaten |
¼ cup milk |
½ cup corn meal |
¼ cup Olive oil |
Cajun Rub:
4 Tbsp paprika

3 Tbsp cayenne (red pepper)
|
2 ½ Tbsp coarse ground black pepper
|
1 ½ Tbsp garlic powder
|
1 ½ Tbsp onion powder
|
3 Tbsp salt
|
¾ teasp dried oregano
|
¾ teasp dried thyme
|
Preparation:
- Prepare Cajun Rub: Combine all ingredients in container and mix well. Store tightly sealed; shake well before each use. Use as a coating mix for fish or chicken.
- Marinate fish: Beat together egg, milk and 1 Tbsp Cajun Rub and pour into zip lock bag with fish fillets to marinate for 5-10 minutes.
- Prepare coating: Combine the corn meal with 1 Tbsp of the rub in a shallow bowl or plate.
- Prepare skillet: Heat olive oil in skillet until drop of water sizzles.
- Prepare fish: Dredge fish thoroughly in the seasoned flour before placing in skillet.
- Cook: Fry fish for 3 to 5 minutes on each side and serve immediately.
Serves: 3-4
